Ham and pea sauce

If you love cooking like me, I bet you are always looking for tasty new recipes to try to test your skills in the kitchen and then to amaze your guests and diners during your dinners and lunches.

Today, I propose you a very popular pasta sauce in Italy. The raw ham and pea sauce.

This quick and easy recipe comes from the tradition of popular Parmesan cuisine and the doses are recommended for 4 or 5 people.

Ingredients:

  • • 1 hectogram of raw ham;
  • • 500 grams of peas;
  • • 30 grams of butter;
  • • 2 tablespoons of extra virgin olive oil;
  • • 1 tablespoon of tomato sauce;
  • • Half a glass of water or dry white wine;
  • • Salt and Pepper To Taste.

Preparation:

Cut the raw ham into cubes (for a sauce intended for 4-5 people you need a hectogram, editor's note), boil the peas (half a pound for each pound of ham, editor's note) and then drain.

In a saucepan melt 30 gr. of butter, add two tablespoons of oil and sauté the raw ham.
When this is golden, add the peas together with a scant spoonful of tomato sauce dissolved in half a glass of water (some prefer half a glass of dry white wine, editor's note).

Season with salt and pepper and let it reduce for five minutes.

Recommended pairing:

Personally, I recommend that you combine the raw ham and pea sauce with homemade egg spaghetti and add a good sprinkling of grated Parmigiano Reggiano on top, when serving them.
