The sparkling wine Before the night, me and Silene in the meadow is a classic vintage brut method from Sgavetta grapes, produced in Pedecollina, in the Bibbiano area, Reggio Emilia.
Before the night, Silene and I in the meadow, tells the story of Silenus, the son of a nymph, the wild spirit of pressing grapes, tutor and lover of Dionysus.
It tells the story of a sunset, of a journey along the Via Emilia, of a stop in the countryside with the checkered tablecloth stretched out in the meadow among the flowers of Silene.
The vine is 100% Sgavetta, an ancient grape, almost forgotten. Precisely for this reason this grape was chosen for a special vinification, in rosé.
The first pressed must is selected, which ferments at a controlled temperature and rests on the lees for 6 months in concrete vats.
After bottling it referments and ages 18 months, maturing the aromas from the yeasts and lees of the wines.
The remuage is strictly manual and the yeasts are removed with degorgement a la volée.
The pale onion skin color characterizes this rosé sparkling wine, which has delicate bubbles on the palate. The aroma is fresh and fragrant with flowers.
The ideal combination for this classic vintage brut method is simply the right company to share it with, preferably on a checked tablecloth spread out on the lawn, enhancing the simplicity of the food and good company.
